More on Spring

Spring can be a hard season to recognize in the Maritime provinces. Some years it's just 5 days between the last snowfall and the first crop of black flies. If you look for signs though, they are there. I'm optimistic. Really. All of the wild fluctuation in temperature from day to night is somehow perfect for collecting sap from our lovely sugar maple trees.


There's a reward for you! Maple syrup. It is one of the truly beautiful things about a Maritime "spring". The other plus for me is recycling those humble buckets that collect this delicious treat.

  
Forget the grey skies and the slush and add some color to your world I say. Treat yourself to some real maple syrup on your pancakes too!
